Buffalo Wing Sauce – Medium

I haven’t found a good Buffalo Wing Sauce in the stores but this recipe makes an excellent sauce.  We use it all the time with the Buffalo – Cilantro Chicken Sandwich recipe.

Ingredients:

  • 1 cup Frank’s cayenne pepper sauce
  • 1/3 cup vegetable oil
  • 1 tsp sugar
  • 1/2 tsp cayenne pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp Worcestershire sauce
  • 1/8 tsp ground black pepper
  • 1 egg yolk
  • 2 tsp water
  • 2 tsp cornstarch

Directions:

  1. Combine all ingredients except the egg yolk, water and cornstarch in a small saucepan.
  2. Heat sauce over medium heat until boiling, then reduce heat and simmer for 5 minutes.
  3. Remove from pan and allow it to cool, uncovered, for 10 minutes.
  4. While sauce cools, vigorously whisk egg yolk with the 2 tsp of water in a medium bowl for about 2 minutes or color is pale yellow.
  5. Whisk in cornstarch until dissolved.
  6. Drizzle sauce mixture into egg yolk mixture in a steady stream while whisking rapidly.  This will create a thick, creamy emulsion that will prevent the oil from separating.
  7. Cover sauce and chill until needed.
